When Vancouver's gift cows to Kamehameha began grazing the island down to the sea, the king hired Hispaniolas to save the island - and the cowboys stayed on out west in Waimea to head up Hawaii's paniolo culture. Fifty thousand cattle - Texas longhorns - and wild Kona donkeys still roam 200,000-acre Parker Ranch, which sits in the saddle formed by two volcanoes, 5,480-foot Kohala and 13,796-foot Mauna Kea, highest elevation in Hawaii. Ride the Parker Ranch, watch cattle roundups, attend 4th of July Rodeo. Thunder over rumpled landscape in ATVs. Swoop over Kilauea volcano in a chopper. Parker Ranch Museum traces six generations of family history to 1809 when a New England seaman jumped ship, married a local princess, and did right well for himself. Gaze upon 100 French impressionist paintings in a Victorian mansion that belonged to the late Broadway actor Richard Smart, a Parker family heir. Shop Waimea Farmers Market on Saturdays for local fruits and veggies. Eat at Merriman's, and Edelweiss, and go to Bamboo in nearby Hawi for local treats. Take Mamalahoa Highway out of Waimea to explore Waipi'o Valley, a yawning crevasse laced by more than 1,000-foot Hi'ilawe waterfall, Hawaii's tallest.
